Corn Chowder
2 tbsp. butter or margarine
1 medium onion - chopped
2 cups (16 oz.) diced potatoes
2 cups (16 oz.) corn
1 1/2 cups water
1 can evaporated milk & enough milk to make 2 1/2 cups
1 1/2 tsp. salt
Cook butter & onion in kettle (deep pan) until onion is yellow.
Add potatoes, corn & water.
Cook until potatoes are tender.
Add milk & salt.
Cook 3 minutes.
Serves 6
(all cups 8 oz.)
